Apple Crisp for Joseph

This recipe was in my parents Wheat for Man cookbook from the 1970s (this title is entirely too dramatic for a cookbook). I modified it with oat flour, but you can use regular wheat flour. The oat flour tastes better because it is a dessert.

6-8 Medium Apples, sliced or diced
1/4 c. Sugar

1/2 tsp. Cinnamon

1/4 c. Butter

1/2 c. Oat Flour

3/4 c. Brown Sugar

1/4 c. Oatmeal

Preheat oven at 350F. Butter a medium baking dish. Add diced/sliced apples. Sprinkle with sugar and cinnamon. Combine butter, oat flour, brown sugar, and oatmeal. Spread mixture on top of apples. Bake for 40-45 minutes. Serve over vanilla ice cream with real whipped cream.

*This does not store well, so feed it to a crowd.

Did you have a lot of free time yesterday? There is a lot of new stuff since last I looked at your blog. I know I have been busy because it is the end of the month but I don't think I was that busy. By the way...I like the picture of the tile that was on some other post.
