Lime Rice: Gluten-free

1 cup rice
1 1/2 cup water
1/4 tsp sea salt x2
1/2 cup fresh cilantro, chopped
2 fresh limes, juiced
1 TBSP olive oil
1 garlic clove


Add water, 1/4 tsp. of sea salt, and rice to a saucepan and bring to a boil, then reduce heat to simmer, cover and stir until fluffy and moist. In a food processor or blender, include the remaining ingredients plus two TBSP of water. Combine with rice and serve.
