Glorious Sleep
After only getting two hours of sleep Saturday night, I went home from Hyrum's baby blessing for three hours of nap, followed by 13 hours of real, solid, didn't move three inches I was so tired, sleep. It was wonderful. I still feel like I could use a little more, but at least my chest doesn't feel like it's gonna cave in anymore!
In the time that I was awake (Scott had already been furiously cleaning everything in the house), I made some baked apples that were pretty good. I took Marcia, Mike, Em, AJ, and Hyrum to the State Farmers Market on Friday, which resulted in some fabulous fruit, veggie, honey, and lilac finds. The apples were delicious when baked. The recipe is not mine, but I'll post it anyhow. Maybe I'll make the rest into Finnish Apple cake. Hmmm....
Baked Apples (or pie filling)
8 apples peeled and sliced
1 1/4 Cups of sugar
4 TBSP flour (oat for me)
1 TBSP cinnamon
1 tsp ground nutmeg
4 TBSP softened butter
Mix together until apples are well coated, then bake covered at 375 degrees for one hour. Serve with ice cream or whipped cream.
