Guacamole: Gluten-free of course...

1 avocado, diced
1-2 tsp. fresh lime juice
1/2 tsp. ground sea salt

Mash it all in a bowl with a fork. Put the pit in the bowl to keep it fresh. Eat it fast, guacamole doesn't keep past a couple of hours.
