Creamy White Chili

*Levels of Difficulty:

Phil = Take-out (with occasional strokes of cooking genius)
April = Easy

Emily = Moderate
Anita = Some Skill
Ali = More Skill
Joseph = Don't Bother Trying It On Your Own

I made this really great southwestern chili for the Super Bowl and it was delicious! It's in the cookbook I gave out two Christmas' ago (pg. 107), but not everyone has it so I thought I'd post it for the non-cookbook people. I'll let the attendees of the party leave testaments to it's fantastic-ness. It's not good for vegetarians or dairy allergies, but it's great for everyone else.


*Level of Difficulty: April

3-4 chicken breasts cubed
1 medium onion diced
1 TBSP Garlic Powder
2 TBSP Olive Oil

Combine in skillet and heat until chicken is thoroughly cooked.

4 cans of great northern beans rinsed and drained
28 oz. chicken broth
14 oz. green chillies
2 tsp oregano
2 tsp cumin
2 tsp salt
1 tsp pepper

Add these to a large pot with the cooked chicken and bring to a boil. Simmer for 30 minutes.

2 cups sour cream
1 cup whipping cream

Before serving, add the sour cream and whipping cream. Eat with tortilla chips.

Hmmmm...this sounds fabulous. I'm starving right now. I've never seen white chili, but we're trying it soon!

It really was delicious. I just kept eating and eating and, well, you get it.

Why didn't Phil make the rating system? Because there's no category for microwave or take out? :)

I just made this chili for company and it was awesome...I had never made it before and had no glitches or anything. I was asked for the recipe several times during the evening...I will forward them a link here...kudos to Ali!
