All Purpose Gluten-Free Flour

1 part Brown Rice Flour
1 part Tapioca Flour
1 part Amaranth Flour

Evenly mix and keep in a container. Add a heaping teaspoon of xanthan gum to your pre-measured all purpose flour mix at the time you are making individual recipes for best results. Do not mix xanthan gum into your general supply of all purpose flour. This mixture will give you the best results if you want to have flaky breads and crusts, and has the least flavor to it in terms of being able to absorb the flavor that you want. For instance oat flour has a distinct oat flavor and corn flour a distinct corn flavor, which you don't always want.

If you are having trouble finding any of these flours on the shelves of your local health store, don't fret. Amazon.com is selling food now and I found this company, called Barry Farm, out of Wapakaneta, OH that sells odd flours in small and large portions. I ordered 6lbs. of amaranth this way with high success.

Have you tried white rice flour in your mix instead? That's all I have on hand and wonder if I will get the proper results using that. Thanks!

I'm sure white rice flour would work just fine. It's always best to use up what you have on hand.

This might be a dumb question...but for your 4 cups of GF flour mixture you use for your pie crusts you mix
1+1/3 cups of each flour to create 4 cups? I'm new to GF. Thanks!

Jen, your math seems right to me. I usually mix up a large container of the flour 15-20 cups at a time so that I don't have to do the math. Good luck!

Do you add the 1 heaping tsp of xanthum gum per 1 cup of pre-mixed gf flour?

This is a life saver! Thank you! I have been referred to you by a relative as my daughter just was diagnosed with wheat, corn, soy, egg, nut and shellfish allergies. I am a big at-home baker/cook. This AP flour recipe will be sitting in my 25 lb container in place of wheat flour!
