Flourless Chocolate Raspberry Torte

I can't take any credit for this. It's my friend Amy's recipe, and it is hands down my most requested dessert. Jakey requested it this weekend and I obliged him. Then his girlfriend, Susanna, wanted to break up with him so she could marry this dessert instead. I like to top this torte with chocolate ganache and fresh raspberries just to make myself and others weak in the knees.

Level of Difficulty: Emily

2 cups of semi-sweet chocolate chips
1/2 cup butter
5 eggs, separated
1 Tablespoon vanilla
1/4 cup powdered sugar
Fresh raspberries to garnish

Preheat the oven to 250. Make a paper collar for your springform pan by spraying the bottom and sides with butter Pam, then secure parchment paper on the bottom and sides with the butter Pam. Dust pan with cocoa powder. Over low heat, melt chocolate and butter. In a large bowl, beat yolks with vanilla. Slowly mix warm chocolate into yolk mixture until blended. In a small, non plastic bowl, beat egg whites on high until soft peaks form. Gradually beat in 1/4 cup powdered sugar until it dissolves and stiff peaks form. Fold whites into chocolate mixture 1/3 at a time. Spoon batter into pan spreading evenly. Bake 1 hr or until toothpick comes out almost clean. Cool in pan. Drown it in chocolate ganache or sprinkle with powdered sugar, garnish with raspberries.

I don't know that you can call the level of difficulty Emily considering that I have successfully made this twice. Also, I don't think Susanna has to break up with Jake. She can just invite the torte into the relationship much like I did with the epidural. Dave, the epidural and I have been quite happy.

The rating system was already in place. Isn't that torte the last thing you cooked more than a year ago? And I think that Susanna already invited the torte into the relationship, they took half of it home with them.

I can't take all the credit...actually my dad Dave first made the recipe (I think from a Hershey's cook book) many years ago. I thought no one in life should have to live without chocolate cake, so when you were diagnosed (the first round) with all of your crazy food allergies, I felt this must be passed to you! I will tell my dad he's a homewrecker though.

See, and I don't even OWN a springform pan. I think it must be harder than an Emily T.
Also, I think you're just taunting us because we have great weather and you don't.

I'm just going to run the torte batter and the ganache into Susanna through a catheter like an epidural. She'll like that.

Em, you can use a regular pan if you want, springform just works better. Jakey, Susanna would like that batter piped in.

All I have to say is, I WILl be making this asap! I have made a similar recipe in the past but without the ganache. I will now have Ali to thank for my increased girth...esp in the rear section.

I made chocolate chip pumpkin spice cookies for fake thanksgiving with Liz. And I made the second batch of sweet potato wedges for actual thanksgiving.It seems, you gave no thanks for my efforts since you so callously forgot them.
