I got adventurous this year and decided to make a yule log like my dad did when we were kids. A friend of mine from church was kind enough to give me the recipe for her meringue mushrooms to adorn my yule log. She made me some last year and man are they good. So if you're looking for something wicked easy and fun to make that's also cute for last minute gifties, here's the recipe. Most people have the ingredients on hand. Merry Christmas Eve!!
Meringue Mushrooms
1/2 cup egg white [4 eggs]
1 cup sugar
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 teaspoon vanilla
Beat egg whites and cream of tartar. Add vanilla, salt, and sugar gradually when soft peaks form. Using a #6 plain tip and a 16" pastry bag or a gallon ziplock with the tip cut off, squeeze out caps and stems on a foil lined pan. Dust caps with Nestle Quik. Cook at 200 degrees for 2 hours. Turn oven off and prop oven with a wooden spoon. Melt chocolate chips and use to 'glue' together caps and stems. [Makes 25-30 mushrooms]
